I ain't no Betty Crocker...

but, nonetheless, I cooked! Around this house, you don't see that very much. Don't ask what we do for meals, you may not like my answer...

Anyway, I've been going to this Bible Study with ladies from our church called Apples of Gold. It's on Monday nights and the group consists of mentors (older, more wiser ladies :)) and mentorees (younger, not so wise ladies :)) and the night sorta goes like this:

1. arrive and eat an appetizer
2. our lovely cook demonstrates and complete meal for us (that we will eat later) and gives us the recipes (something I really need - I want to learn to cook someday!)
3. break for the bible study/discussion
4. eat and fellowship (the meal is ALWAYS delicious!)

As much as I love the fellowship with other ladies, the food is REALLY good!

All that to say, our appetizer this week was BBQ cups and seriously, I could've eaten the whole plate, they were so good. So, I thought I'd give it a try tonight and cook some to go along with our chicken sandwiches that Clay was in charge of.

Here's the recipe: (great appetizer, especially now that it's football season!)

1 (10 count) can of biscuits
1 lb ground beef
1 tblsp mincd dried onions
1/4 cup of BBQ sauce (I just used the KRAFT ORIGINAL)
2 tblsp brown sugar
1/2 cup grated cheddar cheese

(**NOTE: I tried to make this as "low fat" as possible by using lean meat, splenda/brown sugar mix, and 2% cheese)

Preheat over to 375 degrees
Brown meat in a skillet with minced onions until all pink is gone. Drain liquid and stir in BBQ sauce and brown sugar.
While meat is cooking, spray muffin pan with PAM, separate biscuits and press down into muffin pans and up the sides.
Spon the meat mixture into each biscuit and top with cheese.
Bake 10-15 minutes or until biscuits are golden brown.

And to top it all off, hold on to your seats, I also baked a cake!!!

This is a delicous cake, recipe from my grandmother.

For the cake:

1 Duncan Hines Cake Mix (any flavor)
1 small package instant pudding mix (match flavor to cake mix)
4 eggs
1 cup of water or milk (I used milk)
1/2 cup oil

Mix cake mix and pudding mix dry. Add the rest of ingredients. Stir until mixed.
(*It will be VERY thick)
With mixer, beat for two minutes.
Make sure pan is greased and pour into pan (I'm using a bundt pan - star shaped!)
Bake according to cake mix instructions.

For the frosting:

Powdered sugar (use your judgement for how thick, how much you want)
Flavor: about 1 tsp
lemon juice (if using lemon cake mix/pudding
vanilla extract
Liquid: about 2 tbsp
melted butter, milk

Flavor and liquid should match the cake flavor. The amount of sugar, flavor, and liquid depends on desired taste and consistency.
Pour frosting over cooled cake.

(*My icing was too thin - but, I ran out of powdered sugar..hopefully it'll harden a bit and I can spread the rest out...it does have a really good flavor though!)

I actually cooked tonight too! I tried a few of Hollie's recipes. I will have to try those cups. How cute would they be in the mini muffin tins?

PS Love your new haircut(new to me). We need to get together sometime....We miss you art school.

Ok, first. Your haircut looks really really cute!

2nd -- yay for cooking. and way to share the steps by photos. I'm impressed! :) Those look yum-o! I might have to try those this weekend when we have company!

I think the biggest obsticle for me when I first got married and cooking was just being consistent and doing it more than once a week. Then I totally got the hang of it. I am a gravy pro now and my Mom is so proud!! :)

i love apples of gold, i was in the program first and loved the bump it gave my cooking :) I even became a helper in the kitchen of an apples of gold the next semester; learned a lot there too. Glad you are doing the program

I loved AOG too! I didn't know how to boil water practically when we got married (luckily Jonathan was the oldest of 4 & he did a lot of teaching)... but when I was a helper for AOG the 2nd go around, that's when I actually started cooking a little more or experiementing... still don't love it; hopefully Noah will like to cook & one day will cook for me...hehe
